One basic technique is to start with a color picture and then create a selection around the object to stay colored. Then invert the selection and remove the color from this inverse selection.

What I usually do is select (magnetic lasso or magic wand tool) the part that has to remain colored and then press ctr+shift+j which copies the selected area to a different layer. Then I click back on the background layer and press ctrl+shift+u which turns it to Black and white except for the portion on the different layer. Once it is done you can combine the two layers by pressing ctrl+e and save it..
It is selective coloring.
(assuming you have photoshop)
open photo in Photoshop
go to layers - click duplicate layer - click OK
go to image - adjustments - click desaturate
choose eraser tool (with opacity %26amp; flow at 100%, hard - edged brush) and erase through the top layer to reveal the color beneath.

This is how I would do it in Photoshop:
1. Copy Background layer
2. Lasso off the lips (or magic wand)
3. Eraser the BW (the color is underneath)
